Eating Well is Jiu-Jitsu: Banana Protein Muffin

We know and understand that maintaining a healthy lifestyle often can be somewhat boring when it comes to food. Chicken with sweet potato, protein shake, brown bread with cottage cheese and so on… But with this trend of healthy lifestyle around the world, we can find many good recipes and then vary the menu.

We already know about many benefits that bananas can offer to our health. As such, recipes with this fruit are never too much. Today we will make a delicious and nutritious Banana Protein Muffin. Paper and pen in hand, let’s get started!

Ingredients: 

bananas_21/2 cup of Oatmeal

1/2 ripe banana

4 egg whites

1 scoop of Vanilla Protein

2 Tbsp of sweetener

1/8 tsp of salt

1/4 tsp of baking soda

1/8 tsp of baking powder

15g of ground nuts

Preparation:

Muffin-Protéico-de-Banana-e-Quinoa-31Preheat the oven between 200˚C and 250˚C (390 and 480F)

Mix the dry ingredients: oats, protein, sweetener, salt, baking soda and yeast.

Wet ingredients: Mash the banana with a fork and add the vanilla and egg whites.

In a bowl, mix the dry and wet ingredients with the nuts, until they are WELL blended.

Spread the dough in an aluminum baking pan and bake for 20 to 25 minutes.

Note: You can go poking with a toothpick until it comes out clean and dry, without pulling the dough (there’s a banana inside, but you won’t want to wait until it dries, otherwise the muffin itself will be totally burnt).
